Bollo de mantequilla in Bilbao
There is a wonderful city in the north of Spain where the grass is always green, the rain is your best friend and going out to eat some pintxos (the basque interpretation of tapas) is the best excuse to see friends and family while enjoying all sorts of amazing food.
If you ever visit this beautiful place, you cannot miss one of its sweet treasures: The Bollo de mantequilla.
This pastry is the fluffiest brioche filled with a soft butter cream. A dream come true for breakfast or afternoon snack!
Fun Fact
Even if Basques don´t love it, this sweet delight has its origins in Switzerland as a brioche without butter cream. The original swiss pastry was developed (and improved in my gourmand opinion) to the dessert we have today.
